As you all know, Pastor Grimenstein will be installed as Zions Pastor on Sunday April 9th at 2:00pm.  The Events committee is planning the Installation Celebration but would love to have some help with some of the food items.  If you would be willing to prepare any of the following items, please respond to me at tharrissyd@comcast.net.  Please plan on 100 plus people in attendance.  THANK YOU!!  Tracey

  • Potato Salad – 2 volunteers needed (please double your recipe)
  • Asian Slaw – 2 volunteers needed (recipe included and please double)
  • Broccoli Salad – 2 volunteers needed (recipe included and please double)
  • Fruit salad – 2 volunteers needed
  • Cocktail meatballs – 2 volunteers needed (recipe included, please make a least 100)
  • Hot Crab Dip – 2 volunteers needed (recipe included and please double)
  • Cookies – several volunteers needed (we would love to have the traditional Pittsburgh cookie table)

Hot Crab Dip

6 oz lump crab meat
4 oz cream cheese, softened
¼ cup sour cream
¼ cup mayo
2 tbs minced green onion
2 large garlic cloves, grated or minced
1 tsp Worcestershire sauce
1 tbs lemon juice
½ cup of shaved Parmesan cheese, to mix in
¼ cup of shaved Parmesan cheese, for topping
Salt
Sresh cracked pepper

INSTRUCTIONS
1.    Preheat the oven to 350
2.    Combine all the ingredients, except for the ¼ cup of Parmesan cheese, in a bowl. Mix well.
3.    Transfer the mixture to a baking dish and cover with the rest of the Parmesan cheese.
4.    Bake for 18-20 minutes.


Sweet and Sour Meatballs (or Cocktail Sausages)
1 12 oz jar Chili Sauce
1 16-18oz jar grape jelly*
2lb frozen meatballs or 2-3 packages cocktail sausages

*note that you could use the smaller jar of jelly instead, I think it’s more like 10oz.  I like the sweetness of the 18oz jar, but you could make it less sweet with the small jar if you prefer.

Combine jelly and chili sauce in a crock pot and stir until smooth.  Heat the mixture if needed to combine.  Add meatballs or cocktail sausages and set temperature to low.  Cook for 2-5 hours on low.  Serve with toothpicks.


Broccoli Salad
2 heads broccoli chopped
1 cup Bacon pieces, cooked
Sunflower seeds – 2-3 Tbl
1 cup shredded sharp cheddar cheese
1/2 cup Red onion chopped

Dressing:
1 cup Mayonnaise, real
1/3 cup White sugar
3 Tbl.  vinegar


Asian Slaw/Oriental Salad
1 bag of cole slaw (I like the kind with purple cabbage and carrots)
1 pkg. Oriental ramen noodles
1 small bag of slivered almonds - toasted
1 bunch of green onions – chopped
2-3 Tbl sunflower seeds

Dressing
1/2 cup vegetable oil
1/2 cup sugar
1/4 cup cider vinegar
Season packet from the Ramen noodles
Mix together and add dressing right before serving
